Bolognese Sauce

Ingredients
1 carrot, chopped
1 celery stalk, diced
1 onion, diced
3 oz pancetta, diced
1/2 lb ground veal
1/2 lb ground beef
3/4 cup red wine
1/4 cup canned tomato paste
1 1/4 cups vegetable stock
Pasta - penne or shells
 
Directions
1. Saute the vegetables with the pancetta.  Add the veal and beef.
2. Add the red wine, tomato paste, and vegetable stock.  Season, cover, and cook for at least 1 hour.
3. Serve sauce over thick pasta.
