Gingerbread Cookies

2 1/4 cups all purpose flour
2 tsps ground ginger
1 tsp baking soda
3/4 tsp ground cinnamon
1/2 tsp ground cloves
1/4 tsp salt
3/4 cup butter, softened
1 cup white sugar, granulated
1 egg
1 Tbsp water
1/4 cup molasses
2 Tbsp white sugar, granulated
1. preheat oven to 350 degrees F (175 degrees C)
2. Sift together flour, ginger, baking soda, cinnamon, cloves and salt.  Set aside
3. In a large bowl, cream together the butter and 1 cup sugar until light and fluffy
4. beat in egg
5. Stir in the water and molasses
6. Gradually stir the sifted ingredients into the molasses mixture
7. Shape dough into walnut size balls and roll in the remaining 2 Tbsp of sugar
8. Place cookies 2 inches apart onto an ungreased cookie sheet or parchment paper and flatten slightly
9. Bake of 8-10 minutes in preheated oven
10. allow cookies to cool on baking sheet for 5 minutes before removing to a wire rack to cool completely
