Scottish Shortbread Cookies

Ingredients
2 cups flour
1/2 cup powdered sugar
1 cup butter, softened
1/4 tsp baking powder
1/2 tsp salt
 
Directions
1. bring butter to room temperature, leave on counter for 20 minutes or so
2. mix the softened butter with the sugar until light and fluffy
3. add the flour, baking powder and salt
4. mix well.  bring together in a ball with your hands.  the mixture will be crumbly until you do.  press into a ball.
5. form a disc with the dough, wrap in plastic and refrigerate for 30 minutes
6. roll out into 1/4 inch thickness
7. using a sharp knife or pizza cutter, cut into rectangles
8. poke a fork carefully into the little triangles, creating holes which help with even cooking
9. bake on ungreased cookie sheet for 20 minutes at 350 degrees
10. remove to cooling rack and serve
