deep dish pizza chicago style

really tasted like the pizza in chicago!
1/4 cup melted butter
1 1/4 cups warm water
1 1/4 tsp salt
1 tbsp sugar
3 1/4 cups bread flour
1/2 cup cornmeal
2 1/4 tsp yeast
1/4 cup butter, softened
1. To make crust, put ingredients into a bread maker in the order given EXCEPT THE SOFTENED butter.  Put breadmaker on dough cycle. 
2. When dough cycle is finished, roll dough out into a 12x15 rectangle, and spread with softened butter.  Roll up into a 12 inch log, and cut in half.  (At this point, dough can be frozen). 
3. Put dough in fridge for an hour or so while making sauce.  
4. To make sauce, cook 1 small grated onion in 2 tbsp butter.  Add one 28 oz can crushed tomoatoes, 3/4 tsp salt, 1 tsp oregano, 1/2 tsp red pepper flakes, 3 garlic cloves and 1/4 tsp sugar.  Cook about 30 minutes.  
5. To make pizza, spray pam into a small (10 inch) cast iron skillet.  Press dough into bottom and sides.  
6. Put in 2 cups of cheese, toppings (I put in proscutto and blue cheese), SAUCE ON TOP, and a bit more cheese. 
7. Bake in 425 degree oven for 28 minutes, and let sit for 15 minutes before cutting.
