Puerto rican style red beans (Susie's recipe)

Ingredients
1 1/2 tbsp oil
3/4 cup onion, minced
1 clove garlic, minced
1 1/2 cups dried red beans, soaked and drained at least 4 hrs
1 bay leaf
2 cups tomatoes, chopped
1/2 bunch green onions, chopped
broth, as needed
2 cups butternut squash, cubed
1/2 cup unsweetened coconut milk
2 tsp fresh thyme
1/4 cup cilantro, chopped
salt and pepper
 
Directions
1. heat oil in large saucepan.  Cook onions until 4-5 minutes.  add garlic and cook about 1 minutes more.  Add the tomatoes and cook, stirring frequently until tomatoes melt into a paste, about 20 minutes.
2. Stir in beans and bay leaf.  Add enough broth to cover the beans by 1 inch.  Bring to a simmer and cook until the beans are nearly tended, 45 to 50 minutes.
3. Stir in the squash and coconut milk.  Simmer until the squash is tender, 10 to 15 minutes more.
4. Stir in remaining ingredients and simmer until good flavour develops, 10 to 15 minutes more.
