Susie's baked beans

  • Currently 4/5
These were delicious! Susie used white beans, rather than great northern beans, and she left out the bacon. I will try this in the instant pot: stay tuned.
1 lb great northern or white beans
1 lb bacon
1 onion, chopped
2 jalapeños, chopped
1/4 cups tomato paste
1/4 cup brown sugar
1/4 cups molasses or maple syrup
1/4 tsp cayenne pepper
1 tsp black pepper
2 tsp salt
1. Soak beans overnight in a plastic container with just enough water to cover them.
2. In a cast iron dutch oven over medium heat, cook bacon, onions, jalapeños,  for about 5 minutes until bacon is rendered and vegetables are soft (if bacon is not used, sauté vegetables in 2 tbsp of butter). Stir in tomato paste, syrup, and brown sugar.
3. Drain and reserve soaking liquid from beans.  Add enough broth to make 4 cups. Put in pot with beans and spices, stir, and cover with lid.
4. Bake 6-8 hours at 250 degrees until beans are soft.
