Janice Cook: The CSA basket was quite the adventure last week. We are trying radishes again this week, this time we're pickling them: 30 Bucks a Week - Radish Pickles. We had a delicious stir fry last week to use the snow peas and rainbow chard from the CSA basket. This week we're having stir fry again but with bok choy and spinach and snow peas. We're cooking a chicken in the slow cooker to use for lettuce wraps later in the week (Sunny Anderson - Asian Lettuce Cups). And we made a giant pasta salad with the CSA spinach Chilled Pasta with Broccoli, Spinach, and Tomatoes in a Creamy Dressing. So far that's what we've gotten done.
Janice Cook: Tonight we make my husband's favorite meatloaf: Kathi's Famous Meatloaf. Also, our CSA season began today: 18 weeks of fresh produce but we'll never know what we are getting until we pick it up. Janice Cook: So excited to have Memorial Day off from work this year for a change. We'll be celebrating by grilling our first meal of the season: grilled corn on the cob, Weight Watchers - Grilled Zucchini Flatbreads, and Lori's - Grilled Pork Tenderloin

Janice Cook: Not doing a ton of cooking these days - just way too much to do everywhere else in the house. That being said, today we'll be making a soup: America's Test Kitchen - Italian Meatball Soup. For a side dish with extra iron we'll be making Taste of Home - Spinach Orzo Salad and the quick meat item to go along with it will be Eileen Stalec's Ginger Soy London Broil.
Janice Cook: For the muffin of the week we'll be trying Pineapple Pumpkin Muffins. Our slow cooker adventure will be meatballs, Cuisine Slow Cooker - Greek Meatballs in Tomato Sauce. Tonight we'll have mexican: Grow, Cook, Eat - Guacamole with Charred Tomatillos and Chiles and Grow, Cook, Eat - Butternut Squash Tacos with Spicy Black Beans
Janice Cook: The plan for the week: Whole Wheat Roll-ups with Tangy White Beans and Vegetables, Whole Living - Zucchini Patty Sandwiches, and Healthy Homestyle Cooking - Tomato Mac n Cheese. We'll also be doing a variation on last week's deviled egg adventure: Healthy Cooking - Asian Deviled Eggs. For my husband's muffins to enjoy along his smoothies this week we will try Weight Watchers - Morning Glory Muffins. We'll be doing a simple marinade on a pork tenderloin as well and then that's about it!

Janice Cook: Husband is still enjoying smoothies and muffins and I've enjoyed taking them along with my lunch so I get to try another new muffin recipe. For sides we will be trying 101 Cookbooks - Baked Quinoa Patties, 101 Cookbooks - Pan-Fried Corona Beans and Kale, and 101 Cookbooks - Orzo Soup.
Janice Cook: This week we're making a lunch for family: 365crockpotblog - Falafels served on whole wheat pitas with a yogurt sauce, lettuce, and tomato. We'll also serve 2 cold sides: Taste of Home - Green Bean and Walnut Salad and, one of our favorites, Cooking Light - Silky Sesame Cucumbers. My husband has been really into smoothies for breakfast so I get to try out some muffin recipes so he has a carb option alongside. Last week was whole wheat apple muffins (from a box so we could see if the smoothie plus muffin breakfast was a winner). This week I'll make a batch from scratch and have an excuse to try a new recipe: Weight Watchers - Honey Plum Muffins. Other than that we'll be eating stuff from the freezer - there is lots and lots up there!

For sides: The Bitten Word - Fajita Sweet Potatoes, Smitten Kitchen - Sweet Potato and Marshmallow Biscuits, and Six Sisters' Stuff - Nutella Banana Bread. We'll probably supplement with some frozen veggies but I wanted that extra bread in the menu this week.

Janice Cook: Been craving a good soup so we're hoping to try Healthy Cooking - Irish Lamb Stew. The other two main dishes this week will be chicken based: Cooking Light - Chicken with Pepperoni-Marinara Sauce and Smitten Kitchen - Buttermilk Roast Chicken. Janice Cook: Dying to try making fruit leather so I think we're going to start with a basic strawberry batch and an apple batch this weekend: Super Baby Food - Fruit Leather. Although we have a favorite chili recipe and aren't usually open to trying new ones, this one sounds different enough and my work friends give it raved reviews so we need to try it: Phyllis' Sweet Potato Chili. I'm a sucker for individual servings of anything and these look adorable: Cook's Country - Breakfast Buttercups. For meat, I'm craving beef and I'm craving easy: Healthy Cooking - Sweet and Sour Brisket and Healthy Cooking - Chocolate Chipotle Sirloin Steak. Janice Cook: For main dishes this week we will try Leah's Orecchiette with Kale, Bacon, and Sun-Dried Tomatoes and Ellie Krieger - Pork and Mango Stir Fry. We didn't make the snow peas yet from last week (Clean Eating - Snow Peas with Sweet and Sour Dressing) so those will get made today. Later in the week we will have Ellie Krieger - Ham-Wrapped Endive Au Gratin and a food network recipe for stuffed zucchini that I will input in a little bit. Hope everyone is having a great week!
Janice Cook: Making the 365crockpotblog - Falafels again because they came out so well. Last week we tried them with yogurt sauce but this week we'll make them into pita sandwiches and add some veggies. Still have some chicken leftover on the whole chicken that we cooked so we'll be trying out Healthy Cooking - BBQ Chicken Pizza Roll-up. And since stop and shop is having such a fantastic sale on whole chickens we'll go ahead and make Taste of Home - Herbed Roast Chicken. For sides we've chosen 365crockpotblog - Honey and Cinnamon Glazed Carrots, Taste of Home - Cheddar Mashed Cauliflower, Creamy White Bean and Vegetable Mash, and Clean Eating - Snow Peas with Sweet and Sour Dressing.

Janice Cook: We have a good amount of meat for the weekend all cooked in the fridge so I'll mostly try out new side dishes this weekend: Healthy Cooking - Baked Veggie Chips, Healthy Cooking - Puffy Apple Omelet, Eating Well - Individual Brussels Sprout and Potato Frittatas, Mrs. Lee's Corn Casserole. When we do run out of meat we will try out our new slow cooker ribs recipes: 365crockpotblog - Korean Ribs and 365crockpotblog - Smoky Country Style BBQ Ribs.
Janice Cook: For New Year's Day we are devoting the entire day to gaming - so many more Christmas presents to try out before vacation ends! A friend is coming over to help. He is bringing bacon corn muffins with cream cheese frosting for an adventurous snack to sustain us during gaming. For a low maintenance dinner that will require us to step away from gaming for as little time as possible we will be serving 365crockpotblog - peperoncini beef sandwiches, OAMC - Asparagus Italiano, and OAMC - Roasted Grape Tomatoes.
Janice Cook: We're cooking our big holiday meal this Friday: Cooking Light - Apple Poblano Whole Roast Turkey, Leah's Mashed Potato Casserole, Around My French Table - Cheese Puffs, Taste of Home - Roasted Pepper Salad with Balsamic Vinaigrette, Katherine Archer's Zesty Quinoa with Broccoli and Cashews, and Roasted Brussels Sprouts and Grapes with Walnuts.
Janice Cook: Enjoying cooking from my bookmarks - you guys share great things! SLK's Yamazette (Yum-a-setta) was FANTASTIC. Dawn Knowlton's OAMC Corn Souffle is cooking right now and I'm extra excited that there are another 3 batches of it waiting in the freezer. Nicki's Slow Cooker Italian Chicken (for pasta) is cooking and that will be nice to take out of the freezer on a busy night too. later today we plan to bake some bread but that's where we are at for now.
Janice Cook: Missing having things in the freezer at the ready so we'll start with some cookie dough: Make-A-Mix Slice and Bake Oatmeal Cookies. For the freezer from our bookmarks we'll be making Kristen's teriyaki chicken and Dawn Knowlton's OAMC oven barbecued chicken. Also from bookmarks but being made for this week will be Eileen Stalec's Buttermilk Oven-Fried Chicken and Katie Logan's Slow Cooker Char Sui Pork Roast. We'll also have london broil in the freezer at the ready for Paula Deen - Balsamic Glazed London Broil when we need something quick. For side dishes we'll keep it simple with baked sweet potatoes and Tyler Florence - Warm Wilted Winter Greens. Hopefully this menu will help us handle last minute baking requests for work parties, quick weeknight meals during this busy time of year, and also have some stuff build up in our freezer again. . . . because things just seem to get busier and busier. Janice Cook: Haven't been doing a lot of cooking but this weekend we're going to try to get back into it. Mashed potatoes, sweet potato fries, stir fry, Eating Well - Farmer's Market Fried Rice, Passionate Vegetarian - Incan Quinoa-Corn-Potato Stew, and a delicious zesty quinoa broccoli and cashew dish from my bookmarks. Janice Cook: pot roast was good. we made two roasted chickens which were good but i didn't care for the gravy that was included in the recipe. also made a batch of mashed potatoes with broccoli mixed in (recipe to be posted soon). today i'll be making a bunch of side dishes to work through the rest of the parsnips, carrots, and potatoes.
Janice Cook: We were hit pretty hard by the snowtoberfestaggedon here in CT so we lost everything in the fridge and freezer. Today we'll be cleaning it out, starting fresh, and restocking with all sorts of freezer meals. 4 days without power and we were some of the lucky ones. Hope everyone is safe!

Janice Cook: Been craving hummus again so we'll try a new recipe: Vegetarian Times - Classic Hummus. Eating Well - Sweet Potato Puree with Browned Butter Maple Syrup and Martha Stewart - Israeli Couscous with Brussels Sprouts will be our side dishes. we'll be enjoying Clean Eating - Spaghetti & Meatball Casserole and Martha Stewart - Skewered Greek Meatballs from the freezer. Taste of Home - Lasagna Con Carne and White Bean and Kale Soup with Turkey Sausage will round out the menu.
Janice Cook: Tomorrow we're hosting our annual Practice Thanksgiving Celebration - we all meet to try out new thanksgiving recipes. I'll be making Cooking Light - Apple Poblano Whole Roast Turkey, Bon Appetit - Roasted Cranberry Sauce with Herbed Candied Walnuts, Family Circle - Easy Pumpkin Pie, Clean Eating - Coconut Cinnamon Sweet Potatoes. Other friends are bringing rolls, apple pie, mashed potatoes, brussels sprouts, broccoli rice casserole, and stuffing.
Janice Cook: Never got around to making that Clean Eating - Pomegranate Chipotle Chicken so we'll be making this this week. Have a coupon for chicken sausage so we'll be trying out Eating Well - Warm Chicken Sausage and Potato Salad. Finally, because we have a sausage coupon I've chosen Braised Kale with Spicy Sausage.
Janice Cook: In 3 hours we stocked the freezer with TONS of food. Now to cook for this week. We'll be baking sweet potatoes and stuffing them with craisins, some leftover cheese, and some sauteed brussels sprouts. I've been craving Kiena's Creamy Ham and Cheese Mac so that's on the list. For new recipes from this month's cooking magazines I plan to try Clean Eating - Pomegranate Chipotle Chicken, Clean Eating - Southwest Meatball Skillet, and Martha Stewart - Braised Short Rib, Stout, and Potato Potpies. It's a comfort food kind of week!
Janice Cook: Our freezer stock is getting low. Today we will prepare Dinner Doctor - Italian Mini Meatloaves, a double batch of Clean Eating - Spaghetti & Meatball Casserole, and a double batch of Martha Stewart - Ground Meat Mix (to become Martha Stewart - Skewered Greek Meatballs some other time).
Janice Cook: Lost a dear friend this week. Having a bunch of friends over tonight to celebrate his life and just be together during this difficult time. Threw together a quick, comforting menu to gather around: Hannaford's - Cajun Slow Cooker Chili, Penzey's Sweet Summer Corn Bread, Artichoke Arugula Salad, Cooking Light - Silky Sesame Cucumbers.
Janice Cook: Time to get back to cooking now that the silly hurricane and it's associated power loss have passed. This week's line-up: Taste of Home - Pasta Sauce served on egg noodles, Arugula Pesto served on Wacky Mac, Chicken with Yogurt and Cumin served with frozen sweet potato fries, Chicken, Corn, and Black Bean Enchiladas, two batches of homemade yogurt, and a tray of Hippy Granola. We'll also be having a special brunch on Sunday - making ebelskivers for the first time and serving it with fruit and Taste of Home - Baked eggs with cheddar and bacon.
Janice Cook: Tomorrow is my birthday so Sam is making dinner for me. An almond crusted pork tenderloin with cranberry apple conserve (recipe to be inputted later if we like it, Passionate Vegetarian - Golden Days of Summer Corn Soup, Passionate Vegetarian - Parmesan Crusted Zucchini Pudding in Tomato Cases, and Cooking Light - Greek Yogurt with Warm Black and Blueberry Sauce. Very excited :)
Janice Cook: Only making one meal this weekend: Cooking Light - Silky Sesame Cucumbers, Clean Eating - Potato Crust Pizza with Roasted Eggplant and Peppers, and Sunny Anderson - Asian Lettuce Cups.
Janice Cook: The food we made for the moving party this weekend lasted the entire week so we didn't have to cook. Tuesday we brought dinner over to a friend's house who is about to go back to work after having a baby. We brought desserts from the weekend, a lasagna we had in the freezer, and whipped up a quick pasta salad. Wednesday we went out to eat with friends using a gift card. We'll be away again this weekend so I'm not planning food for a week - just enough to get us started. Using meat we have in the freezer we'll be making Penzey's - Swedish Meatballs and Cooking Light - Grilled Steak with Baby Arugula. I also plan to try The New Whole Grains Cookbook - Overnight Apple Date Muesli this week to see how it works out as a breakfast option. We've still got one more meal in the freezer and our garden is in full swing. Hoping to make some side dishes out of our garden veggies next week and maybe even do some canning.
Janice Cook: Having some friends over on Sunday to help us move a piano. Of course we'll be feeding them dinner: Eating Well - Tortellini and Zucchini Soup, Taste of Home - Scrumptious Vegetable Lasagna, OAMC Family Favorites - Italian Sausage and Spinach Pie, Cake Mix Doctor - Toffee Crunch Cheesecake Bars, and Better Homes and Garden - Cherry Tassies.
Janice Cook: This week we also ended up making Strawberry Soup (because the strawberries were getting soft faster than I could keep up). We got a great deal on some beef stir fry meat and added it to a bag of frozen stir fry veg and leftover orzo. For a sauce the Weight Watchers - Peanut Sauce worked great. The final addition to the menu was made by cutting up some soft fruit (3 bananas and a peach), freezing it, and then throwing it in the food processor along with a splash of milk to get the texture right. It was a great, healthy frozen treat. We topped it with a few chocolate chips for that frozen banana concept. Try it the next time your bananas are too brown for your liking!
Janice Cook: We are undertaking a challenge for the month of August to make our grocery bill as small as possible. I'll be trying to select recipes that have ingredients we have in the house as much as possible. My shopping list for tonight is milk, a box of pasta, 2 boxes of orzo, and a can or quartered artichoke hearts. We grilled some chicken tonight with a spice rub of ingredients we had on hand. I'll be making How to Cook Everything - Irish Soda Bread for the week and Hippy Granola to make our homemade yogurt a bit more filling. We have some leftover zucchini pasta sauce that we'll be serving with pasta and I plan to make Pesto Orzo as well. I will also make my normal two batches of yogurt - the 14 servings we need for a week. We'll see how far this food stretches us but so far I think we're off to a good start.
Janice Cook: Today we're throwing some BBQ sauce on chicken drumsticks I found in the freezer and baking them - nothing fancy. To use up the cucumbers from our garden we'll try out Cooking Light - Sauteed Miso Cucumbers and for the garden zucchini/summer squash I'll be making Martha Stewart - Zucchini Tart.
Janice Cook: Such a quick, healthy meal: Clean Eating - Guacamole Fettucine with Sauteed Beef Strips
Janice Cook: My schedule is much more flexible now that it's summer so we're not planning as far in advance. We've assembled two pans of summer squash lasagna Al Fresco - Roasted Pepper and Asiago Summer Squash Lasagna so one went in the freezer and one will get baked later this week. We'll also try out a balsamic chicken dish Balsamic Chicken with Asparagus and Parsley.

Janice Cook: found some nice fresh corn and tomatoes at the farmer's market today. . . this week we will also try Passionate Vegetarian - Creamy American-Style Scalloped Pesto Potatoes, Weight Watchers - Pasta Primavera, and http://www.foodnetwork.com/recipes/michael-symon/bratwurst-stewed-with-sauerkraut-recipe/index.html. for protein this week we'll be using chicken but keeping it simple, likely simple marinades and grilled chicken. to me, it's not about meat in the summer - - - it's about fruits and veggies.
Janice Cook: last week's cooking adventures was making yogurt for the first time. takes very little attention from me - just inactive time (planning ahead). SO much cheaper than at the store and better for the environment since you can reuse the glass jars over and over. the greek batch came out better than the regular. we mixed in our homemade strawberry jam . . . great use for the jars that were a bit runny and just the right amount of sweetener.

Janice Cook: Having some company tomorrow. For lunch we will grill up some chicken to use in the dinner recipe as well as serve Grilled Fajitas and Grilled Corn on the Cob (from a book in the library - will input if they come out good). For a fun beverage(?) we'll also be serving Taste of Home - Molded Margaritas. For dinner we'll turn that grilled chicken into a Rachael Ray - Grilled Chicken Posole Salad served with a side of Neely's Quick Bread. And for dessert some Taste of Home - Ginger Peach Milk Shakes.
Janice Cook: Kicked off summer vacation with Eating Well - Almond Crusted Chicken Fingers. Healthy and delicious. We made a double batch since chicken tenders were BOGO at Big Y this week.
Janice Cook: We've got some meat leftovers still from a fabulous taco party and some sloppy joe we took down from the freezer so we're OK for main dishes for a bit and those sugar snap peas and various fruit items should take care of sides for a couple of days. That means all I'm shopping for today is a grain to round out upcoming lunches and dinners. I chose Sesame Rice and Clean Eating - The Loaded Bowl.
Janice Cook: My husband made this fun side dish to bring to a party we were going to this weekend: Penzey's - Pineapple Fried Rice. Our sugar snap peas are growing like crazy in our garden thanks to all the rain. I love eating them raw but it might be time to look for some good recipes that can help us use them up. Anyone have any favorites to share?
Janice Cook: Lately my cooking style has been to make a double batch of a freezer friendly meal so that I get to try the recipe and then try it again, defrosted, before rating it. Make ahead meals are so great to have on hand so I've been furiously testing new recipes to add to my arsenal. The book I'm using also tends to have pretty cheap main dishes (a bonus) and then I pair it with a fresh veggie side dish to punch up the nutrition. Janice Cook: Really enjoyed the homemade bread last week so this week we'll be making a double batch of All American Low Fat or No Fat Meals in Minutes - Blueberry Lemon Loaf and All American Low Fat or No Fat Meals in Minutes - Summer Herb Buttermilk Bread (one for us and one for a BBQ we are going to tomorrow). Our meatless pasta dish for the week will be Cooking Light - Orecchiette with Roasted Peppers, Arugula, and Tomatoes and we will also be trying out a new lasagna recipe (can never have too many) Penzey's Spinach & Eggplant Lasagna. Finally, as the days get warmer we'll be getting back into summery salads such as Eating Well - Sesame Tuna Salad.

Janice Cook: Just got home from Disney world and although the food was better than I expected I'm craving home cooked foods and VEGETABLES! Also, we're enjoying hummus on wasa bread as a snack currently as well as hummus as a sandwich bread. Janice Cook: We've had a lot of snow days so once we heard that it was time to go back to school I baked these muffins to ease myself back into the idea of working: Taste of Home - Peanut Butter Banana Mini Muffins. When they came out of the oven, our town changed their mind and we have ANOTHER snow day. It's a magical recipe!!

We made a batch for us and a batch for a friend who is having surgery this week. Can't wait to make them again!

Janice Cook: I love snow days because I get to enjoy the bounty of food in our freezer and I get to enter in a few new recipes.
Janice Cook: Had 5 friends over for dinner and games last night. Made a casual menu featuring: Williams Sonoma - Freezable Macaroni and Cheese, White Bean and Kale Soup with Turkey Sausage, and paninis. We bought bread from a local bakery, cold cuts, cheese, and put them all out on the table with a variety of condiments. People made their sandwich and my husband made them into paninis on the george foreman grill. Very little hands on cooking time when guests were there and it was a casual, filling menu that had wide appeal. If you haven't had panini night yet, try it!
Janice Cook: Couldn't resist another great meat sale at Big Y. These two meals are great to have on hand in the freezer for busy nights and they use mostly ingredients you already have in your pantry. Janice Cook: We've eaten out of the freezer all week long - so many leftovers. We're only cooking this weekend because we have friends coming over, not because we need food :). On the menu, paninis (reubens and the like) served with White Bean and Kale Soup with Turkey Sausage, Williams Sonoma - Freezable Macaroni and Cheese, and Healthy Homestyle Cooking - Macaroon Filled Chocolate Cupcakes. If you haven't tried this soup recipe yet you really, really should. It's amazing, easy, not too expensive, and healthy.

Janice Cook: I got a ton of awesome cookbooks for Christmas but we also have a tremendous amount of leftovers from all of the feasts so it will be a while before I can try them out. Happy 2011 everyone!!
Janice Cook: Our first time hosting the big Christmas meal was an A+ experience. We had a blast preparing it, it came out great, and was well received by all. Now we'll host the other side of the family for New Years. Today we'll make homemade mozzarella cheese Mozzarella Cheese for the caprese salad and use the whey to make bread Italian Feather Bread (made with Whey). We'll also assemble tomorrow's dinner dishes: Cooking Light - Mexican Chicken Casserole with Charred Tomato Salsa and Chow - Winter Greens Lasagna. Lunch will be sandwiches but these casseroles will be served for dinner along with Cooking Light - Silky Sesame Cucumbers and Barefoot Contessa - Roasted Tomato Caprese Salad. In the morning I'll whip up two pancake batters: Cooking Club - Cranberry Oat Pancakes, Cooking Club - Cranberry Oat Pancake Mix, Eat, Live, Run - Whole Wheat Butternut Squash Pancakes and cook them fresh as people wake up and are ready to eat.
Janice Cook: Christmas Dinner for 8 tomorrow - the first official family meal we will cook in our new house. The snowstorm has prevented me from finding the proper protein but I will go out in search of that today after we shovel. Eunice : hi Janice! just wanted to warn you as you bookmarked one of my recipes. the Organic Whole Wheat Sandwich Bread needs major adjustments. it was a recipe that somebody gave me and they must have forgotten something as it was too dry and crumbly. you should use the recipe for 100% Whole Wheat Sandwich Bread instead as that recipe has the proper proportion of wet to dry ingredients, tastes good and is a whiz to make.

Janice Cook: Birthday Party Menu (Day One): Bacon Cheddar Burgers (from our local butcher), White Bean and Kale Soup with Turkey Sausage, Avocado Mac and Cheese, and a Cannoli Cake (I will add the recipe if it's yummy - taken from Cake Mix Doctor)
Janice Cook: Never made a whole chicken before but I think today is the day to try. Clean Eating - Balsamic Roast Chicken with Potatoes and Green Beans will later turn into Clean Eating - Hearty Chicken Penne. We'll also try outBob's Red Mill - Quinoa Crusted Chicken Strips with Chipotle Pepper Drizzle and Taste of Home - Hearty Meatless Minestrone.
Janice Cook: 2 friends are coming over for dinner tonight. We are serving White Bean and Kale Soup with Turkey Sausage, Better Homes and Garden - Grape and Rosemary Foccacia, Rachael Ray - Grilled Chicken Posole Salad, and Taste of Home - Peanut Butter Brownie Trifle Recipe

Janice Cook: This week we are trying to clean out the pantry and make some space. (We have 2 unopened boxes of whole wheat lasagna noodles) Taste of Home - Fiesta Lasagna, (we forgot to use the feta cheese when we made these yesterday)Taste of Home - Basil, Feta, & Roasted Pepper Muffins, (we have canned pineapple and BBQ sauce and leftover goat cheese) The Biggest Loser - Thin and Crispy Gourmet Hula Pizza, (We have a partial box of orzo) Weight Watchers - Orzo with Garlic-Ginger Vegetables, (a variety of leftover shredded cheeses, half an avocado already diced, a cup of sour cream, and an open jar of salsa) Nachos of course - no recipe needed
Janice Cook: Saturday we're having company! Taste of Home - Basil, Feta, & Roasted Pepper Muffins, Shredded Chicken and Avocado Pizza, Taste of Home - Ranch Mac and Cheese, Easy Lava Cake with ice cream. Margaritas, beer, and Nintendo Wii - - - should be a fun night.
Janice Cook: Already, I feel much better now that the freezer is restocked. Dinner tonight will be Clean Eating - Spanish Pork with Redskin Potatoes
Janice Cook: Refilling the freezer tonight: Weight Watchers - Bean, Vegetable, and Feta Bake, Taste of Home - Meatball Sub Casserole, The Biggest Loser - Chocolate Peanut Butter Grahamwiches, andEating Well - Berry Almond Quick Bread.
Janice Cook: 4 new recipes to try out this week: Janalee's Mini Ham and Egg Casseroles, Eating Well - Buttermilk Herb Mashed Potatoes, Cooking Club - Scrambled Egg Potato Baskets, Weight Watchers - Sweet Potato Chips. I chose the first one because we have ham in the fridge already and the other 3 are from my cookbook but lack ratings and pictures. . . only one way I know to solve that!!
Janice Cook: For moving party Day Two we served cut-up veggies with a bacon dip as well as Taste of Home - Scrumptious Vegetable Lasagna and Robin Miller - Make Ahead Baked Ziti with Turkey Sausage (which we took down from the freezer!!). It was fantastic to sit down to a home-cooked meal after a long day of moving and furniture assembly.
Janice Cook: Today was moving day and until we get a bit more unpacked at the house we won't be doing as much elaborate cooking as usual. That being said, the in-laws are visiting tomorrow so we will be servings a Bacon Dip with cut up veggies, chicken grilled with a bottled marinade, Clean Eating - Orange Herb Dressing in Cooking Light - Spring Salad with Grapes and Pistachio Crusted Goat Cheese. Our new kitchen is beautiful so we hope to unpack quickly and make lots of yummy food in that new space soon.
Janice Cook: We didn't make a big Easter meal this year but because so many people were talking about Ham I just entered in a bunch of quick and easy Ham Steak recipes. They often go on sale at the store and can be so very quick to prepare. Glazed Ham Steak, Grilled Ham Steak with Apricot Glaze, Bobby Flay - Maple Peach Glazed Ham Steaks, Marinated Ham Steaks, and Ham Steak with a Cherry Sauce
Janice Cook: This weekend we plan to make Taste of Home - Broccoli-Ham Macaroni, Avocado Mac and Cheese, and Rachael Ray - Yukon Gold Potatoes, Jacques Pepin Style. We have a freezer full of frozen veggies and we took down sloppy joes and spaghetti sauce from the freezer so that should take care of this week nicely.
Janice Cook: This weekend's cooking plan is: American Chop Suey, Baked Plum Tomatoes, Black Bean and Tomato Quinoa, Butternut Squash and Pear Soup, Clean Eating - Beef and Broccoli Orange Stir Fry. Tuesday night I'll be entering in a chili contest. Very excited!!: Hannaford's - Cajun Slow Cooker Chili
Janice Cook: At Nicki's request, I'm sharing some ideas for freezer friendly meals. Freezing meatballs and sauce makes meatball subs easy to throw together (in my cookbook I have 3 recipes - sauce, meatballs, and the sub - all are by The Biggest Loser. Giada De Laurentiis - Butternut Squash Lasagna takes a bit of work but is outstanding. Soups are always great to freeze, don't forget about them! Robin Miller - Make Ahead Baked Ziti with Turkey Sausage, Weight Watchers - Bean, Vegetable, and Feta Bake, and Taste of Home - Scrumptious Vegetable Lasagna make regular appearances in the freezer. Freezing spaghetti sauce or sloppy joe mix or taco meat can be helpful. Can't seem to find it tonight but we have a great turkey picante pie recipe that's freezer friendly too. I'll try to post it when I come across it next. Does anyone else have any favorite freezer friendly meals??
Janice Cook: Cooking for the week is complete! Velvety Broccoli and Feta Pasta will be OK but we wouldn't make it again. Zucchini and Yellow Squash with Greek Spices andPom-Glazed Baked Squash and Apples are still cooking (will post on it later). White Bean and Kale Soup with Turkey Sausage was outstanding.
Janice Cook: Sam is making Taste of Home - Scrumptious Vegetable Lasagna and Robin Miller - Make Ahead Baked Ziti with Turkey Sausage to stock our freezer. We know these meals will come in handy once our big moving weekend is here.

Janice Cook: Weight Watchers - Beef and Bean Tacos were excellent. I'm glad we made a double batch because they tasted just a good for leftovers and we came to look forward to them when coming home from work. This weekend's cooking adventures will include Ellie Krieger - Asian Noodle Bowl, The Biggest Loser - Grilled Chicken Parmesan, and Weight Watchers - Cream of Broccoli Soup.

Eunice : hi Janice! you've got a lotta' great recipes and i'm so glad you are sharing them. not sure if you've seen it, yet, but there's a tool that you can use when you post an Update that would really zip people right to your recipes. right below the text box, to the right of the "Share" button, when you click "Share recipe" it will bring you a search box that allows you to pull up whatever recipe is in your collection and adds the links to your post. if you don't care for it, i hope you don't remind if i respond and add the links myself. :) i thought it would be nice for people to have easy access to good food and you have quite a healthy collection of good eats. thanks again for the tortilla soup recipe!
Janice Cook: Today: Weight Watchers Eggplant Parmesan Heros and Taste of Home Lemon Chicken Tortellini. We will also portion out all of the bulk meat we purchased yesterday and freeze it and then make taco meat for Weight Watchers Beef and Bean Tacos later in the week.
Janice Cook: Today's cooking adventures included a Chai-Spiced Apple Oatmeal Bread, Quinoa Soup with Avocado and Corn, and Holiday Roasted Sweet Potatoes with Cinnamon Pecan Crunch (from Nicki Scheck's cookbook). Many thanks to my husband for cooking these while I worked on recipe planning at the computer.
Janice Cook: Kielbasa and Coconut Basmati Rice as a side dish. Keepin' things quick and easy tonight.
Janice Cook: We had a much busier weekend than usual so we're cooking as the week goes. . . . like normal people do :). Tonight was Baked Mac and Cheese with Spinach and Weight Watchers Roasted Sesame Pork.
Janice Cook: Stocking the freezer tonight - we made sloppy joes, spaghetti sauce, meatballs, and marinara sauce. The meatballs and marinara will become meatball subs when we have company for dinner on Tuesday. The rest is being stored to make this week a little bit easier. We were travelling this weekend so we didn't prep for an entire week.
Janice Cook: Yummy honey harvest quinoa for breakfast. Now it's time to cook for the week: balsamic chicken drumsticks, make ahead mashed potatoes, maple squash puree, chicken with a warm corn and tomato salsa, coconut rice, steak fajitas, and that weight watchers veggie bake that i enjoyed so much last week for the freezer. I'm going to work on getting more of my recipes entered into the site while my husband cooks the above menu - best Sunday ever :)
Janice Cook: menu for the week: Cocoa crusted pork tenderloin with a mole sauce, asparagus soup, alphabet soup, and stuffed peppers.
Janice Cook: tried to make a quinoa and pomegranate salad today but apparently the pomegranate season ended early this year so we'll be using dried cranberries. we are serving it with a roasted sweet potato soup. unsure yet what the meal plan is for the following week since we haven't eaten the vegetable lasagna yet or made the bean, feta, and vegetable bake from last week
Janice Cook: It's Sunday so we're prepping food for the upcoming week. . . Jason's Zesty Black Bean and Corn Salad will be served in pita pockets, trying avocado corn soup for the first time, pasta fagioli soup will be a big batch to last all week, roasted cherry tomatoes will be a quick and easy side dish, using up our left over sweet potato in quesadillas, trying asian quinoa (always looking for more ways to use this protein packed ingredient!), and assembling a vegetable lasagna and weight watchers bean, feta, and vegetable bake for the end of the week.
Janice Cook: Today we are having friends over for Nintendo Wii, brunch, and dinner. Brunch: Blueberry Almond French Toast Bake (Ellie from the Food Network) and Onion Frittatas with Roasted Tomatoes and Melted Cheddar on Ciabatta Rolls (Tom Collichio's book 'wichcraft) Dinner: Meatball Subs, Mashed Orange Sweet Potatoes, Balsamic Roasted Broccoli (all recipes from The Biggest Loser)
