101 Things to Do with Zucchini - Balsamic Zucchini Spaghetti

3 Tbs olive oil
1 Tbs dried basil
1 clove garlic, minced
1lb asparagus, cut into 1/2 inch diagonal slices
2 lg tomatoes, chopped
1 medium zucchini, quartered and sliced
2 green onions, cut in 1/2 inch lengths
1 c chicken broth
1 tsp salt
8oz mushrooms, sliced
3 Tbsp balsamic vinegar
8oz spaghetti, cooked
2 Tbsp grated Parmesan cheese
1. In a large frying pan, heat oil with basil and garlic. Add vegetables, chicken broth, and salt. Cook 10 minutes over medium high heat, stirring often. Add mushrooms and vinegar. Simmer 5 minutes and then lower heat and add spaghetti and cheese, toss to mix.
