Fried Rice

When you make your own fried rice you don't have to worry about how salty it is. This tastes MUCH better than the fast-food kind you get in a Chinese restaurant. My family loves it.
1 cup rice (I use long-grain)
2 cups water
2/3 cups carrots, chopped
1/2 cups frozen peas
2 Tbsp. Olive oil
2 eggs
soy sauce, to taste
Sesame oil, to taste
1. In a sauce pan, melt 1Tbsp of butter and add the rice. Saute until it turns opaque. Slowly add the water and bring to a boil. Cover and reduce heat to a simmer. Simmer for 20 minutes or until the rice is done.
2. Soften carrots by putting them in a microwave-proof bowl with an inch of water and microwaving for 3-5 minutes, until they are softened. Add the peas and stir before draining the water, to heat them.
3. On medium-high heat, in a fry pan add the olive oil, carrots and peas stirring constantly for 30 seconds. Add the eggs, continuing to stir quickly, until they are scrambled. Lower the temperature to a simmer or low and fold in the rice. Fold in the soy sauce and sesame oil until thoroughly mixed.
You can use this as a side dish to almost anything. Be creative!
