Luscious Lemon Bars

What a nice and refreshing dessert for the summer! Make this for Memorial or Labor Day or 4th of July! I doubled the lemon filling when I made this but I'll leave the recipe as is for your discretion.
2 cups flour
1/2 cup powdered sugar
1 cup butter, softened
Lemon filling
4 eggs slightly beaten
1-1/2 cups sugar
1/4 cup flour
1/2 cup lemon juice
1 Tbls lemon zest
1. Preheat oven to 350 degrees F (175 degrees C).
2. Mix 2 cups of flour and confectioner's sugar together. Cut in the butter or margarine. Mix well until the dough resembles pie dough consistency. Press the dough into a greased 9x13 inch baking pan.
3. Bake the crust for 15 to 20 minutes or until golden brown.
4. Beat together eggs, sugar, 1/4 cup flour, lemon juice and lemon zest for at least a few minutes, to create a lighter filling. Pour the mixture over the baked crust.
5. Bake the bars for another 20 minutes, or until the lemon topping has set. Sprinkle with confectioner's sugar when cooled.
NOTE: I doubled the lemon filling when I made these and they turned out great. I'm sure if you don't double it, you'll be able to taste more of the cookie crust, yum.
