Macaroni and Cheese

I have tried to find a perfect Macaroni and Cheese recipe and I think I finally found it. This is not only easy but super yummy.
16 oz package macaroni noodles
1/2 cup butter
1/3 cup flour
4 cups milk
8 oz. package cream cheese
3/4 cup frozen peas
1-1/2 cup diced ham
1 Tbls dijon mustard
4 cups shredded cheese
1/2 cup Cheez-its crackers, crushed
1. Preheat oven to 400 degrees.
2. Bring a large pot of lightly salted water to a boil. Add macaroni pasta and cook for 9 to 10 minutes or until al dente; drain.
3. In a large pot over medium heat, melt butter and stir in flour. Cook for about 1 minute, until smooth and bubbly; stirring occasionally. Mix in milk, cream cheese, salt, pepper, and Dijon mustard. Continue cooking until sauce is thickened. Add cooked macaroni and Cheddar cheese, ham, and peas.
4. Pour into 11x14" casserole dish. Crush Cheez-its and sprinkle over the top and bake for 20-25 minutes or until golden brown and bubbly.
I use Cheez-its because my family loves them but if you don't have them on hand, you can use regular butter crackers with melted butter for the top.

You can also omit the ham and peas if you prefer. I add them for extra nutrition.
