Roasted Sweet Potatoes

Perfect side dish and it's so yummy!
Ingredients
Sweet Potatoes, diced
Kosher Salt, to taste
Pepper, to taste
Olive Oil
 
Directions
1. Preheat the oven to 425. Dice the sweet potatoes into bite-sized pieces. 
2. Place the sweet potatoes into a gallon sized bag and coat them with Olive Oil. Sprinkle salt and pepper and shake the bag to coat evenly.
3. Place the sweet potatoes onto a silpat-lined (or parchment paper) baking sheet and bake for 30 minutes.
 
Notes:
I like to do these sweet potatoes instead or regular potatoes to change things up.
