'Grown Up' Mac and Cheese

Mac and cheese...stepped up a bit
4 ounces thick bacon slices
Vegetable oil
Kosher Salt
4 cups elbow macaroni
2 cups milk
2 Tbls butter
4 Tbls flour
6 ounces Gruyere cheese, grated
6 ounces Sharp Cheddar, shredded
3 ounces Blue Cheese, crumbled
1/2 Tsp fresh ground black pepper
1 pinch nutmeg
1/2 Tsp ground mustard
1/2 cup bread crumbs
5 green onions, chopped
1. Preheat oven to 400 degrees F
2. Place bacon in 1 layer on baking rack on a sheet pan.  Bake 15 minutes until crisp.  Cool bacon on paper towels and crumble once cooled.
3. Cook macaroni as per directions on package, 6-8 minutes in a pot of boiling water with oil and salt.
4. Heat milk in saucepan (don't boil).  Melt butter in medium pan and add flour.  Cook over low heat for 2 minutes, stirring with a whisk.  While whisking, add the hot milk and cook for 2 more minutes until thickened and smooth.
5. Take mixture off heat and add cheeses (Gruyere, Cheddar and Blue), salt, pepper, nutmeg and mustard.

6. Add cooked macaroni and bacon.
Stir well.
7. Place in baking dish.  (or individual gatin dishes for individual servings)
8. Sprinkle bread crumbs and green onions over top of the pasta.
9. Bake for 35-45 minutes, or until sauce is bubbly and macaroni is browned on top.
10. ENJOY!
Just remove bacon for a vegetarian version!
