There are so many variations of mix it up and try new things!
This was my first attempt...and not bad if I say so myself.
But then again, with so many ingredients, I think it's hard to mess it up!
Olive Oil
10 each Mussells
chicken breasts, skinless, boneless
1 large onion, chopped
1 red bell pepper, seeded, cut
1 green bell pepper, seeded, cut
1 yellow bell pepper, seeded, cut
salt, to taste
pepper, to taste
1 tsp paprika
1/2 tsp thyme
rice (I used 1 package)
3 cups chicken broth
1/4 tsp saffron
1 can diced tomatos (I used w/green chilis)
12 shrimp, peeled and deveined
2 oz peas
1 package andouille sausage
1 package chunk crab meat
lemon wedges (for garnish)
1. Scrub mussels, chop chicken, sausage, crab meat
2. Heat olive oil, add sausage and brown.
3. Heat olive oil, add chicken and brown.
Add salt, pepper, paprika, thyme.
4. Cook shrimp.

5. Heat olive oil, add veggies.

6. Boil rice with chicken broth.  (I used 'spanish style' rice)
7. Add all cooked ingredients to rice.
Add saffron.
Mix well.
Add more chicken broth, as needed.
8. Bake the paella, uncovered, on the lowest oven shelf, for around 30 minutes or until all of the liquid has been absorbed.
9. Garnish with lemon wedges and serve.
