Aloo Curry (Curried Potatoes)

Caribbean style curried potatoes, delicious with dhalpuri roti.
Ingredients
2 T vegetable oil
1 T cumin seed
4 large potatoes, peeled and diced 1/2 inch cubes
1/4 cup onion, finely chopped
2 cloves garlic, minced
1 serrano or other hot pepper, minced
1 t curry powder
1 t turmeric
1/2 cup water or vegetable broth
1 tomato, chopped
 
Directions
1. In a large skillet over medium-high heat, saute cumin seeds in vegetable oil until browned, but not burnt.
2. Add garlic, onion, and pepper, and cook until soft, about 5 minutes.
3. Add the potatoes, and saute for 5 mintues.  Add tomatoes, curry powder, turmeric, and 1/2 cup water or vegetable broth.  Cook over medium-low heat, occasionally adding small amounts of water to keep the potatoes from sticking.  Cook until the potatoes are tender.  Once tender, cook for 3 mintues more to brown the edges of the potatoes.  Salt and pepper to taste.
