1 C. PINK OR RED KIDNEY BEANS
1 C. CORNED BEEF OR SMOKED HAM 1 IN. CUBES
3 C. WATER
GARNISH FOR BEANS
2 TBSP. OIL
1/2 C. ONION 1/4 IN. DICE
2 CLOVES GARLIC MINCED
1 SMALL HOT RED OR GREEN PEPPER SEEDED AND MINCED
3 TBSP. GREEN SOFRITO
1/4 C. TOMATO SAUCE
1 C. WATER
1 C. WEST INDIAN PUMPKIN OR HUBBARD SQUASH
2 TSP. ADOBO SPICE MIX 1 OR 2
FOR THE RICE
2 TBSP. CORN OIL
1/4 C. CHORIZO CHOPPED
1/2 C. BACON FINE CHOPPED
1/3 C. ONION 1/4 IN. DICE
2 CLOVES GARLIC MINCED
1 TBSP. CILANTRO MINCED
2 TBSP. GREEN PEPPER 1/8 IN. DICE
1 C. BEAN STEW
2 C. COOKED RICE
 
Directions
1. SOAK BEANS OVERNIGHT AND DRAIN.

COMBINE BEANS,PORK,AND WATER THEN BRING TO A BOIL COVER AND SIMMER TILL BEANS ARE JUST TENDER ABOUT AN HOUR.

DRAIN BUT KEEP BEANS AND PORK.

FOR THE GARNISH.

HEAT OIL OVER MED. HEAT AND SAUTE ONION & GARLIC UNTIL SOFT BUT NOT BROWN 2 TO 3 MIN.

ADD PEPPER AND SOFRITO COOK FOR 2 MIN. THEN ADD TOMATO SAUCE AND COOK FOR 2 MORE MIN.

ADD COOKED BEANS AND PORK MIXTURE,WATER,SQUASH,AND ADOBO SPICE MIX THEN COOK UNCOVERED FOR 15 TO 20 MIN. OR TILL SQUASH IS COOKED AND SAUCE HAS THICKENED THEN REMOVE FROM HEAT AND SERVE.

FOR THE RICE.


HEAT OIL AND SAUTE CHORIZO AND BACON FOR 2 TO 3 MIN. UNTIL COOKED.

ADD ONION AND GARLIC SAUTE FOR 3 MIN. OR TILL SOFT.

ADD CILANTRO AND PEPPERS AND SAUTE FOR 3 MIN. OR TILL SOFT.

ADD BEAN STEW AND COOK FOR 2 MORE MIN.

ADD RICE STIRRING CONSTANTLY AND COOK FOR 4 MIN. UNTIL THE CONSISTENCY OF A WET RISOTTO.
