Balsamic Roasted Carrots

Ingredients
1 small bag of baby carrots
4 Tablespoons extra virgin olive oil, divided
1 Tablespoon balsamic vinegar
1/2 teaspoon salt
1/4 teaspoon pepper
 
Directions
1. Preheat oven to 450 degrees.
2. Toss carrots in 2 T olive oil and balsamic vinegar.
3. Spread evenly on a aluminum covered baking pan.
4. Sprinkle with salt and pepper and remaining olive oil.
5. Bake for 20-25 min.  Flipping occasionally.
