Cranberry Mimosa

12 ounces fresh cranberries
8 ounces sparkling apple cider
4 ounces filtered water
2/3 cup white sugar
fresh oranges or clementines
sparkling wine
1. Combine ingredients in medium pot.

2. Bring to a boil, then reduce heat to a simmer.
3. Simmer for 20-25 minutes, then pour into a fine sieve or a strainer lined with cheesecloth. Strain all juice and discard skins, seeds and pulp.
4. Store in an airtight jars for up to 2 weeks. 
5. To make a mimosa, squeeze the juice of 1 clementine or 1/2 of a navel orange into a wine glass, add 1-2 tablespoons of cranberry simple syrup, and top with sparkling wine. Garnish with an orange slice and a few cranberries.
