Makes one loaf. www.StealMyRecipe.com
4 medium overripe bananas (not mushy, but dark spots all over)
1/3 cup melted butter
1/2 cup brown sugar
1/4 cup pure maple syrup
1/4 cup honey
2 eggs beaten
1 teaspoon vanilla
1/4 teaspoon almond extract
1 teaspoon baking soda
1/4 teaspoon sea salt
1 1/2 cups whole wheat flour
1. Preheat oven to 350 degrees.
2. In large bowl, break overripe bananas into bite size chunks.
3. In large mug or bowl, melt butter for 30 seconds in microwave. Then add the brown sugar, honey and maple syrup and stir. Heat for 30 more seconds, then pour over bananas.
4. Using potato masher, mash bananas until mostly smooth. There will still be some chunks, and that's a good thing.
5. Add vanilla, almond extract, and beaten eggs, then stir again.
6. sprinkle salt and baking soda over mixture, and mix once more.
7. Add flour, then carefully mix until just blended.
8. Pour into greased standard loaf pan, and bake for 50-60 minutes, until skewer poked in comes out clean.
9. Let cool for a few minutes in the pan before carefully coaxing it out to cool the rest of the way on a rack.
10. Serve warm with butter or cream cheese.
