Honeycomb Granola

2 cups old fashioned oats
1/4 cup unsweetened flaked coconut
1/4 cup raw sliced almonds
1/4 tsp. sea salt
1/4 tsp. cinnamon
1/4 tsp. almond extract
1/2 tsp. vanilla extract
1 Tbsp. walnut oil (or veg/canola oil)
1/3 cup raw honey
2x1x4 block honeycomb
1. Preheat oven to 300F.
2. In microwave safe mug, mix together the honey, cinnamon, sea salt, extracts and walnut oil. Microwave for 30 seconds until honey has thinned. Set aside.
3. In a medium or large mixing bowl, mix together the oats, coconut flakes and almonds (feel free to add or substitute the coconut and almonds for any kind of nuts or seeds to suit your tastes- I made another batch adding flax, chia and hemp seeds and we love it too).
4. Pour the warm honey mixture into the oat mixture and stir with spatula or wooden spoon until oats are completely covered in honey. 
5. Spread mixture on a sheet pan lined with parchment paper. 
6. Carefully honeycomb into about 8-10 pieces, and gently mix with your hands into the oats on the pan.
7. Bake in the middle rack of your preheated oven for 40 minutes, stirring twice during cooking.
8. Let cool on pan for a few minutes, and then break up and store in airtight container for up to one week. (The longer you let it cool before breaking it up, the clumpier it will be.)
