Makes 8-12 pancakes, depending on size
1 1/4 cups bread flour (all-purpose works too)
1/4 cup sugar
1/4 teaspoon sea salt
2 teaspoons baking powder
1 teaspoon baking soda
3/4 cup milk
1/4 cup vegetable oil
1 whole egg
1 teaspoon vanilla extract
1/4 teaspoon almond extract
3 tablespoons greek yogurt (or sour cream)
1. In large bowl, sift together dry ingredients.
2. In separate medium bowl, whisk together wet ingredients.
3. Add wet ingredients to the dry, and whisk until just combined (do not overmix). Let batter sit 3-5 minutes.
4. Heat skillet over medium-low to medium (depending on your stove's temperament). When hot, spray with cooking spray or coat lightly with vegetable oil.
5. Ladle batter onto hot skillet and flip when sides begin to look dry and bubbles form on the top (about 4 minutes).
6. Let other side cook for just another minute or so, then serve immediately.
7. Topping suggestions: butter and syrup, berries and whipped cream, baked apples and cinnamon, peaches and whipped cream, or the maple berry syrup shown in the picture (handful of mashed strawberries with juice, handful of whole blueberries, about 1/4 cup maple syrup, all reduced down in a pan on the stove until bubbly and hot).
