Skinny Joe Sauce

Low fat, naturally sweetened sloppy joe sauce.
4 pitted whole dates
8 sun-dried tomato halves
3/4 cup chicken stock
1/3 cup shallot or red onion, chopped
2 cloves garlic, sliced
1 tablespoon apple cider vinegar
1/4 teaspoon sweet smoked paprika
1/2 teaspoon salt
1/4 teaspoon pepper
1/2 cup 100% carrot juice
1 can diced roasted tomatoes
1. In microwave safe mug, put dates and sun-dried tomatoes and the chicken stock in, making sure chicken stock covers the dried fruit. Microwave for 2 minutes, then set mug aside to soften dates and tomatoes.
2. In medium saucepan, sauté chopped shallot and garlic (using cooking spray or a tiny bit of olive oil) on medium heat, adding the tablespoon of vinegar when brown bits begin to appear on the bottom of the pan. 
3. When shallots are soft and most of the vinegar has evaporated, add the canned tomatoes, carrot juice, salt, pepper, smoked paprika, and the reconstituted tomatoes and dates (including the stock).
4. Bring sauce up to a boil, then simmer for 10 minutes.
5. Remove from heat and let cool slightly, then carefully ladle into a blender, then cover with a dish cloth and puree until smooth.
6. To serve, brown up to 2 pounds of extra lean ground beef, then stir in desired amount of sauce, simmering together until desired thickness. Serve in between roasted portabello mushrooms or a whole wheat bun.
