Simple Salsa

This is a very simple salsa to serve with tortilla chips perfect for the tiny red chili. It's scientific name is Capsicum spp.This particular chili I grew myself, but you can get info on them from www.kitchengardenherbs.com
Ingredients
3 medium ripe tomatoes
1 bunch cilantro
1 sm/med white onion
1 1/4 tps salt (or to taste)
2 tbs lemon juice
1 or 2 Tiny hot chili peppers
 
Directions
1. Chop tomatoes, onion, cilantro, and place in a medium bowl. Add the salt and lemon juice. Chop the chili/s and add to bowl. (Check the heat with a crisp tortilla chip. You can take out and discard seeds to cut the heat, or leave them for a spicier salsa.) If the salsa is too hot you can cut the heat with a bit more lemon juice.

2. Mix together in the bowl. Serve with crisp tortilla chips.
 
Notes:
This chili has a real smooth heat. It's worth it to save the seeds to grow your own!
It can also be added to scrambled eggs and anything else you need to add a bit of pop to!

THESE TINY CHILIES ARE VERY HOT, USE SPARINGLY AND TAKE CARE TO COVER YOUR FINGERS WITH OLIVE OIL BEFORE USING THEM.
