Southern-Style Buttermilk Biscuits

These biscuits are light, fluffy, and oh-so-addicting!
2 C flour
4 tsp baking powder
1/4 tsp baking soda
1 1/2 tsp salt
4 T butter
2 T Crisco (or shortening)
1 C buttermilk (chilled)
1. Combine flour, baking powder, soda, and salt.
2. Using fingertips, rub butter and Crisco into the dry mixture until it looks like crumbs.  (Be careful not to do this too long or the butter/Crisco will melt.)
3. Make a well in the center of the crumbs and pour in the buttermilk.  Stir until it just comes together.  (The dough will be very sticky.)
4. Put the dough on a floured surface and dust flour on top of the dough.  Fold the dough onto itself 5 or 6 times.  Press out until it is 1 inch thick.  Cut into squares or rounds and place on buttered/floured cookie sheet.
5. Bake at 450* for 15-20 minutes, until tops are golden-brown.
