Omelet Muffins

Omelets... in muffin form
6 eggs
1/2 cup cooked meat in small pieces
1/2 cup diced vegetables
1/8 cup mayonnaise
1/8 cup water
salt and pepper to taste
For Mexican Omelet Muffins:
1/4 cup shredded cheese
1/4 cup onions
1/4 cup lightly drained salsa
1. Preheat oven to 350
2. Generously grease muffin pan with butter
3. In a large bowl, beat eggs
4. Add ingredients one at a time
5. Pour or scoop mixture into 6 muffin cups
6. Bake 18-20 minutes until an inserted knife comes out almost clean
Refrigerate those you wish to save. Reheat in microwave for 30-45 seconds.
