Greek Chicken Cutlets

1 pint cherry or grape tomatoes, halved
1/2 cup Kalamata olives
4 ounces feta cheese, crumbled
1/2 cup mint leaves
2 1/2 Tablespoons olive oil
salt and pepper
1 1/2 pounds chicken cutlets
1. In medium bowl, combine tomatoes, feta, mint and 1 Tbsp oil. Season with salt and pepper. Set aside.
2. Heat a grill pan over high. Brush lightly with oil. Season chicken with salt and pepper. Cook, working in batches if necessary, until done, 1-2 minutes per side. Transfer to a plate and cover with foil to keep warm.
3. Top chicken with tomato mixture and serve.
