Monte Cristo Sandwiches

16 slices white sandwich bread
2/3 cup Dijon-style mayonnaise
1/4 pound Swiss cheese, sliced
1/3 pound Black Forest Ham, sliced and cooked
1/3 pound turkey, sliced and cooked
4 eggs
1/2 cup milk
1 teaspoon salt
1/4 teaspoon pepper
3 Tablespoons butter
confectioners sugar
3/4 cup seedless raspberry jam
1. On a clean work surface place 8 bread slices and spread with mayonnaise. Layer each with slices of cheese, ham and turkey. Top with remaining bread slices.
2. In a shallow pie plate lightly beat eggs, milk, salt and pepper. Melt butter on griddle over medium heat. Dip both sides of sandwich in egg mixture. Place on hot griddle and cook 2-3 minutes, turning once, until golden.
3. Sprinkle with confectioners sugar and serve with jam for dipping.
