Pumpkin Mousse

2 cups heavy cream
1/3 cup powdered sugar
1 can pumpkin
1 Tablespoon pumpkin pie spice
1 cup vanilla pastry cream or prepared vanilla pudding
1. In a cold mixing bowl, whip the heavy cream until slightly thickened. Add the sugar and continue to whip until it forms soft peaks. Divide whipped cream into two equal portions and set aside.
2. Whisk together the pumpkin, spices, and pastry cream (pudding).
3. Fold one portion of the whipping cream into the pumpkin mixture until smooth and even in color.
4. Spoon into serving dishes and top with remaining whipped cream.
