Spinach and Artichoke Dip (MacGregor Draft House)

Makes 8 servings. From MacGregor Draft House in Raleigh, NC
1 pound spinach
14 ounces canned artichoke hearts
1 1/2 cups shredded cheddar cheese
1 1/2 cups shredded mozzarella cheese
1 1/2 cups mayonnaise
1 Tablespoon garlic powder
1. Preheat oven to 350 degrees.
2. Coarsely chop the spinach and artichoke hearts.
3. In a large mixing bowl, combine spinach, artichoke hearts, cheddar, mozzarella, mayonnaise and garlic. Transfer to a baking dish and bake until cheeses are melted and top is lightly browned, about 25 minutes. Serve with toasted pita wedges or tortilla chips.
For a little extra cheesy flavor, add 1/2 cup of shredded Parmesan along with the other cheeses.
