Strawberry Mousse

Makes 12 3-oz servings. From InStyle Magazine
1 pound strawberries, cleaned, hulled and chopped
1 1/3 cups sugar
2 envelopes unflavored gelatin
1 cup heavy cream
3 tablespoons confectioners' sugar
1. In medium saucepan cook strawberries, sigar and 1/4 cup water over medium heat. Stir until sugar has dissolved. Place in blender and puree.
2. Sprinkle gelatin over 1/2 cup cold water in small saucepan. let stand one minute. Stir over low hear until gelatin has dissolved, about one minute. Remove from heat. Stir into strawberry mixture. Refrigerate one hour.
3. In chilled medium bowl beat heavy cream and confectioners' sugar until soft peaks form. Fold into strawberry mixture.
4. Divide into ramekins, cover and refrigerate two hours or until well chilled.
