Sweet Pea Soup

Ingredients
5 Tablespoons butter
1 1/2 cups leeks, thinly sliced, white only
5 Tablespoons flour
6 cups chicken broth
5 cups fresh or frozen peas
3/4 cup heavy cream
salt and pepper
pea shoots and croutons for garnish
 
Directions
1. Heat butter in Dutch oven over medium-high heat. Add leeks and saute until soft, 4-5 minutes. Add flour, stirring until dissolved. Add broth and bring to boil, whisking constantly.
2. Stir in peas, reduce heat and simmer, 10-15 minutes.
3. Using handheld blender, puree. Stir in cream and season with salt and pepper. Garnish with pea shoots and croutons.
