Tomato Salsa

Makes 3 cups. From Williams-Sonoma
Ingredients
1/2 white onion, diced
1/4 cup lime juice
1 1/2 pounds tomatoes
3 jalapenos, seeded and diced
1 Anaheim chili, seeded and diced
2 Tablespoons chopped cilantro
1 clove garlic, crushed
salt and pepper to taste
cayenne pepper, to taste
 
Directions
1. In a small bowl, combine the onion and lime juice and let stand for 10 minutes.
2. Using a kitchen torch, torch the skins of the tomatoes. Let cool, the peel and dice. Put the tomatoes in a separate bowl and stir in the jalapenos, chili, cilantro and garlic. Stir in the onion mixture. Season with salt, black pepper and cayenne.
