Vegan Ricotta Cheese

This is a great alternative to Ricotta when making lasagna. It is cholesterol and you can't even tell the difference!

Very delicious and easy to make.
Ingredients
1 package firm tofu
1 tsp 'mixed up salt' or italian seasoning and salt
3 tsp dried basil
2 tbsp lemon juice
1/4 cup soymilk
3 cloves garlic
1 small onion
dash nutritional yeast
1-2 cup chopped spinach
 
Directions
1. In a small cup, combine soymilk and lemon juice and allow to curdle.
2. In a food processor or blender, add all other ingredients except spinach, and process until well blended.
3. Add soymilk to mixture and finish combining.
4. Stir in chopped spinach.
5. Layer just like ricotta in lasagna recipe.
