Black beans, rice and pineapple

The pineapple adds a little island flare to an otherwise traditional dish.
2-3 tbl oil
1 clove garlic, chopped fine
1/4 cup onion, chopped fine
1/2 cup red or green pepper, chopped
1 cup brown rice
1 can pineapple, separated into pineapple (small bite size pieces) and juice.
2 cups liquid (add water to pineapple juice to make 2 cups)
1 15 oz can black beans, drained and rinsed
1. In a large pot, heat oil and add garlic, onion, pepper and saute for 1-2 minutes. Add rice, stirring constantly then add liquid and black beans.  Simmer for 40-50 minutes, until rice is soft and liquid is absorbed.
2. Add the pineapple and cook until warm, but not soft.,

You can use fresh pineapple, you need about 1 cup.
If the liquid dries up , but the rice is still too hard, add a little bit more water and continue cooking.
