Glazed Walnut Apple Pie

A creamy combination of apple pie and cheese cake with a nutty topping.
1 9" pre-baked graham cracker crust
2 tbsp butter
1 tsp cinnamon
4 tsp sugar
4-5 baking apples
6 oz cream cheese softened (room temp)
1/2 tsp vanilla
1 1/2 cups walnut pieces
1/2 cup shredded coconut
1/2 cup brown sugar
1. Preheat oven to 500 degrees.
2. Peel, core  and slice the apples. In a frying pan or large sauce pan heat the butter and cinnamon over medium heat.  Add the apples and cook till they are tender. 
3.  In a large bowl stir sugar, cream cheese and vanilla until smooth.  Fold in the warm apples and mix until blended well.  
4. Turn the apples into the pie shell, patting to make even.
5. Mix the topping and smooth it over the pie.  Glaze the topping in a hot oven for about 5 minutes. keep an eye on the pie as it can burn easily.
6. Refrigerate at least 2 hrs before serving.

  • To make a graham cracker crust:
  • 1 1/2 cups graham cracker crumbs (from about 9 whole graham crackers)
  • 1/4 cup packed brown sugar
  • 1/2 teaspoon cinnamon, optional
  • Pinch of salt
  • 7 tablespoons unsalted butter, melted
  1. If you're using whole graham crackers, finely crush them in a food processor or place them in a ziploc bag and roll with a rolling pin.
  2. Stir graham cracker crumbs, brown sugar, cinnamon, and salt together in a large bowl. Add melted butter and stir with a fork.
  3. Press mixture into the bottom and up the sides of a 9" pie plate. Chill until ready to fill, or bake in 325 for 8-10 min and cool before filling.
This pie can also be made in a pastry crust.
