Pineapple Meatballs

  • Currently 4/5
1 lb ground turkey
1 tsp worcestershire sauce
1 egg
1/2 cup bread crumbs
2 tbl Hoisin sauce
2 tsp soy sauce
2 tbl fresh ginger grated.
1 cup brown sugar
3 tbl cornstarch
1 3/4 cups pineapple juice (reserved from tidbits or water to make up the difference)
1/4 cup white vinegar
1 1/2 tbl soy sauce
1 1/2 tsp Worcestershire sauce
1 14 oz can pineapple tidbits
1/2 red bell prpper, sliced or chopped
1. Preheat oven to 350. Combine all meatball ingredients in  a large bowl.Mix well and shape into meatballs.
2. Brown the meatballs in the oven on a baking sheet lined with foil for about 15-20 minutes. Drain meatballs and place in a baking or casserole dish.
3. Meanwhile make the sauce by combining the corn starch and brown sugar in a sauce pan. Then add 1 3/4 cup pineapple juice and blend until mixture is smooth. Add vinegar, Worcestershire sauce, soy sauce and stir. Simmer uncovered on medium low until thickened, about 5 min.
4. In the casserole dish pour the sauce over the meatballs and add pineapple tidbits (and the peppers if you are using them). Turn the meatballs to be sure they are covered with the sauce.  Bake in oven for 30-40 minutes.
3 Tablespoons corn starch makes the sauce very thick, if you want the sauce thinner use less corn starch.
