Stir Fry with Soba Noodles

This very versatile dish can be Vegan Vegetarian or with meat or fish. Use any combination of vegetables you like.
Ingredients
Sauce
4 tbs low sodium soy sauce
4 tbs vegetable or chicken broth
4 tsp rice vinegar
4 tsp Sriracha sauce
2 1/2 tbs brown sugar
Stir Fry
4-6 oz Soba noodles
1 tbs vegetable oil
2 cups broccoli florets
1 cup thinly sliced red bell pepper
1- 1 1/2 cups shelled edamame beans
1 med carrot Julianne or peeled in ribbons
1 tbs toasted sesame seeds
1 lg chicken breast cut into bite size pieces (optional)
 
Directions
1. Prepare the sauce by whisking together soy sauce, broth, rice vinegar, sriracha and brown sugar. Set aside.
2. Cook The noodles al dente according to package directions. Drain and rinse with cold water. Set Aside.
3. If using chicken heat oil in a large skillet over med-high heat.Cook chicken till no longer pink. Stir in about 1/4 of the sauce and stir till all chicken is coated. Remove chicken and any remaining sauce in the pan to a bowl.

4. Add the vegetable oil to the pan. When hot add the broccoli and carrots and saute for about 3-4 minutes. Add the peppers and edamame and cook for another 2 minutes until peppers are softened.
5. Add the sauce and the noodles to the pan. Use tongs to toss the noodles and and coat the vegetables with sauce. If using chicken, add to the pan, toss and allow the sauce to bubble up and thicken for 1 minute.
6. put the stir fry in a platter and top with the sesame seeds.
serves 5-6
 
Notes:
I didn't want it too hot so I only used 1 1/2 tsp sriracha. It was not hot at all, next time I will use a little more heat.. If you don't like the spice you can leave it out altogether, it still tastes great.

In place of chicken you could use cooked shrimp, or just vegetables.

If you don't have or like edamame you could use snap peas or green beans.
You could add mushrooms or water chestnuts.
