Paleo Stuffed Chicken

2 large boneless, skinless chicken breasts, cut in half
3 cloves garlic, minced
1/2 red onion, diced
1/2 cup pecan pieces
1/4 cup celery, thinly sliced
1/2 large apple, diced
1/4 cup dates, minced
1 cup beef broth, divided
2 tsp olive oil
black pepper
1. Preheat oven to 400 degrees.
2. Saute onion and garlic in olive oil until tender.
3. Mix in celery, apples, pecans, dates and beef broth. Simmer for about 5 minutes or until most liquid is absorbed.
4. Stuff chicken with mixture (about 2+ tbsp). Roll chicken breast around mixture and secure with a toothpick.
5. Sprinkle chicken with paprika and black pepper.
6. Bake, covered, for about 50 minutes.
7. While chicken is baking, make a sauce with remaining stuffing mixture. Add another 1/2 cup beef broth to mixture and simmer until thick. Top chicken with sauce before serving.
8. Serve with side vegetable of your choice. Steamed zucchini is great, or a nice side salad.
