Aunt Mo's Picnic Chicken

As American as fried chicken - as Italian as Aunt Mo. Great hot, even better cold the next day! Whatever Donna tells you, it's just not as good without the skin and with egg whites - indulge yourself - leave the skin on and use oil!! :O)
chicken pieces, with bone and skin
cooking oil
plain breadcrumbs
grated romano cheese
green onions, chopped
salt & pepper
1. Thoroughly clean chicken pieces, break joints on thigh pieces, remove excess fat, pat dry.

Combine all breading ingredients, seasoning to taste.

Cut wax paper into squares.  You need on piece for each thigh and breast, and one piece for every two wings or drumsticks.

Dip chicken in oil to coat.  Place chicken in breading and pat breading on heavily.  Place chicken pieces on wax paper squares and wrap.  (2 wings or 2 drumsticks per square)

Place wrapped chicken on baking sheet.

Bake at 350 for one hour, turning pieces over after 1/2 an hour.

Cool 10 to 15 minutes before serving.
