Fanny Farmer's Whole-Egg Mayonnaise (Blender Mayonnaise)

This easy blender mayonnaise recipe also can be made with electric beaters.

Yield about 1 cup to 1 1/2 cups. Lasts 5-7 days.
1 egg
1/2 tsp dry mustard
1/2 tsp salt
2 tbsp lemon juice or vinegar
1 1/2 cups oil (olive, canola,etc)
1. Put the egg, seasonings and ΒΌ cup oil in the blender and whirl until well mixed (20 to 30 seconds).
2. Pour in the rest of the oil in a steady stream. Stop as soon as the emulsion is smoothly blended.
Easily memorized and won't even need to come back to this. If not sure about the taste use vinegar for first time, it's closer to the store bought flavour (but a lot more smoother and tastier!)

What I also like to do is use Dijon mustard instead of dry mustard. They are so easily interchangeable, the recipe needs the starch to help bind. No prepared mustard though.

I don't think I even use this much oil either, I just drizzle my oil in until it looks right. Experiment with oils as well!
