Chicken Bacon Ranch Casserole

2 chicken breasts
1 tsp (each) salt and pepper (or to taste)
4 to 5 tbsps Ranch dressing
4 slices smoked bacon
1-1/4 cup shredded cheese blend (of choice)
1. Preheat oven to 400 degrees.
2. Generously season chicken with salt and pepper.
3. Arrange chicken breasts in a greased casserole dish and spread Ranch dressing evenly over the chicken.
4. Cover each breast with two slices of bacon and top with the shredded cheese blend.
5. Bake uncovered for 35-40 minutes.
6. Garnish with freshly chopped scallions and serve.
Good with fresh salad and/or steamed broccoli.
