Chicken Fried Steak with Country Gravy

Ingredients
FOR THE STEAKS
2 tbsps olive oil
1 tbsp butter
1 cup all-purpose flour
1 tsp onion powder
1/2 tsp smoked paprika
1/2 tsp cayenne pepper
Kosher salt and freshly ground black pepper
1 large egg
1/4 cup water
2 lbs cube steak
FOR THE GRAVY
3 tbsps butter
4 tbsps all-purpose flour
1-1/2 cups chicken or beef broth
1 cup milk
Salt and pepper (to taste)
 
Directions
1. PREPARE THE STEAKS
2. Heat the olive oil and butter in a large non-stick skillet over medium heat until ripples begin to form.
3. While the oil heats, whisk the flour, onion powder, paprika, cayenne pepper, and salt and pepper together in a medium bowl.  Set aside.
4. In a separate bowl, whisk together the egg and water.
5. Season the steaks with salt and pepper and then dredge in the flour mixture, then the egg, and then back in the flour mixture a second time to coat thoroughly.
6. Add the steak to the skillet, adding more oil as needed. (Work in batches, if necessary, so as to not overcrowd the pan.  Overcrowding will cause the steaks to steam and the coating will not get crisp.)
7. Cook the steaks for 3 to 4 minutes or until crisp and golden brown.
8. Flip the steaks and continue cooking for an additional 4 minutes until golden.
9. Transfer the steaks to a platter or baking sheet and cover with foil to keep warm.
10. PREPARE THE GRAVY
11. Add the butter to the skillet and sprinkle with flour.
12. Whisk together in the pan and cook until golden.
13. Slowly whisk in the broth and continue cooking until thickened, stirring often.
14. Stir in the milk until smooth and beginning to thicken.
15. Season with salt and pepper, to taste.
16. Serve the steaks immediately with the gravy.
