Easy Tamale Pie

Ingredients
MEAT LAYER:
1 tbsp olive oil
Half onion (diced)
1 lb ground beef (undrained)
1 bell pepper (any color-cored, seeded, and diced)
Half jalapeno (minced)
2 tsps chili powder
1/2 tsp salt
1/4 tsp cayenne pepper
1- 15 oz. can diced tomatoes-undrained (fire roasted, if desired)
1 cup frozen corn kernels
TAMALE TOPPING:
1-1/2 cups milk
1 cup finely ground cornmeal
3 tbsps butter
1/2 tsp salt
1 cup Monterey Jack cheese (shredded)
OPTIONAL PIE TOPPINGS:
Avocado (diced)
Sour cream (dollop)
Cilantro
 
Directions
1. Preheat oven to 400 degrees.
2. MEAT LAYER:
3. In a cast iron skillet (or other large oven-proof skillet), heat the olive oil over medium heat.
4. Cook the onions, while stirring, until they begin to soften, 2 to 3 minutes.
5. Add the ground beef and cook until almost browned all the way through, 4 to 5 minutes.  (Do not drain ground beef.)
6. Add the bell and jalapeno peppers and cook until soft, 2 to 3 minutes.
7. Sprinkle the seasonings (chili powder, salt, and cayenne pepper) onto the beef mixture and stir until well combined.
8. Add the diced tomatoes (undrained-liquid needed for boiling) and corn kernels and bring to a light boil.  Then turn off the heat.
9. TAMALE TOPPING:
10. In a small pot, combine the milk, cornmeal, butter, and salt and bring to a light boil, while whisking constantly.
11. As soon as the mixture begins to thicken (only takes a minute or two), scrape out of the pot and spread across the top of the meat mixture, spreading into one even layer.
12. Top with the shredded cheese and bake until golden brown, about 20 minutes.
13. OPTIONAL PIE TOPPING:
14. Garnish, if desired, with avocado, sour cream, and/or cilantro and serve.
