Mediterranean Chickpea Salad

Ingredients
FOR THE SALAD:
2- 15 oz. cans chickpeas (drained and rinsed)
1/4 cup Italian parsley (chopped)
2/3 cup bell pepper (chopped-mix red/yellow/orange)
3/4 cup grape tomatoes (halved)
3 green onions (sliced)
12 Kalamata olives (sliced in half)
1/3 cup feta cheese (crumbled)
FOR THE DRESSING:
4 tbsps extra-virgin olive oil
2 tbsps plain yogurt
1 tbsp freshly squeezed lemon juice
1 tbsp red wine vinegar
1 small clove garlic (minced)
1/4 tsp cumin
Salt and pepper (to taste)
 
Directions
1. In a large bowl, toss together the salad ingredients.
2. In a separate bowl, whisk together the dressing ingredients.
3. Drizzle the dressing over the salad and toss.
4. Transfer to a serving bowl and drizzle juices on top.
5. Refrigerate until ready to serve.
 
Notes:
Makes 4 main dish servings and 6 side dish servings.
