Peanut Butter Chocolate No-Bake Granola Balls

1 cup peanut butter
3/4 cup honey (or agave)
2 tsps vanilla extract
2 tbsps coconut oil
3 cups dry oats
1/2 cup ground flax seed (might reduce to 1/4 cup)
1/2 cup sunflower seeds
1/2 cup peanuts
1/2 cup mini semisweet chocolate chips
1. In a small saucepan over low heat, combine the peanut butter, honey (or agave), vanilla, and coconut oil.  Stir constantly until melted.
2. In a large bowl, combine the oats, flax seed, sunflower seeds, and peanuts.  Top with the melted peanut butter mixture and mix until completely combined.  (You may need to use your hands to get it all incorporated.)
3. Place the mixture in the refrigerator for about 15 minutes to cool down.  (You don't want the chocolate chips to melt when mixing in.)
4. Once the mixture has come to more of a room temperature, add the mini chocolate chips and incorporate them throughout the mixture.
5. Roll two tablespoons of dough between your hands to form a ball.  Place on a parchment-lined tray or baking sheet.  Repeat with remaining dough until completely rolled into balls.
6. Place the tray in the refrigerator for about an hour to set completely before putting in an airtight zipper bag or sealed container.  You can also opt to freeze them; just take them out of the freezer an hour or two before you want to eat them.
