Zesty Salmon Burgers

Ingredients
FOR THE YOGURT-DILL SAUCE:
1/4 cup yogurt
2 tbsps spicy dijon
1 tbsp dill (chopped)
2 tbsps chives (chopped)
1-1/2 tsps honey
FOR THE SALMON BURGERS:
16 oz. fresh skinless salmon
1/2 red onion (minced)
1 tbsp dill (chopped)
1 tbsp prepared horseradish (optional, but recommended-maybe go light)
1/2 tsp honey
1-1/2 tsps sea salt
1/2 tsp pepper
 
Directions
1. FOR THE YOGURT-DILL SAUCE:
2. In a small bowl, combine all sauce ingredients and set aside.
3. FOR THE SALMON BURGERS:
4. Cut the salmon into 1/2" cubes and transfer to a food processor.  Pulse 5 times.
5. Add remaining salmon burger ingredients to food processor and pulse a few more times to combine.
6. Form burger mixture into 4 patties.
7. Drizzle a small amount of olive oil into a frying pan and heat pan to medium-high.
8. Cook the patties for 3 to 4 minutes until browned.  Flip and cook another 3 to 4 minutes until the other side is browned.
9. Serve salmon burgers on multi-grain bread with yogurt dill sauce.
