Cheese Rolls, Speights Ale House, Napier

Cheese rolls recipes are usually a well kept family secret down south. We had to twist some arms to get the ale houses in Petone and Napier to give you theirs. These are great on a cold winters day with a bowl of your favourite soup.

 GRILL          4            NONE           20 MINUTE

1-2 eggs, lightly beaten
2 cups grated tasty cheddar cheese
1 onion finely chopped
1 loaf toast bread or 16 slices
100g butter melted
Salt and freshly ground black pepper
1. Pre heat the grill to high
In a bowl, combine the eggs, cheese and onions.  Season well with salt and freshly ground black pepper.
Cut the crusts off the bread slices and use a rolling pin to flatten each slice a little.
Spread the cheese mixture evenly over the bread slices and roll up into a cigar shape.
Brush each evenly with melted butter and place in a shallow baking tray
Place under the grill and grill until golden brown, turning to ensure all sides are cooked.
Makes about 16 rolls
