Crunchy Fruity Granola

Makes 12 half-cup servings. Adapted from Vegetarian Times.
2 cups rolled oats
1 cup mixed seeds (sunflower, pumpkin, sesame)
1 cup chopped nuts (walnuts, pecans, almonds, pistachios, etc)
1/2 tsp salt
1/2 cup honey
1/3 cup canola oil
1 Tbl vanilla extract
1 cup dried fruit, chopped (raisins, cranberries, apricots, etc)
1. Preheat oven to 350F.Combine oats, seeds, nuts and salt in bowl. Whisk together honey, oil and vanilla, and stir into dry ingredients. Spread granola on baking sheet coated with nonstick cooking spray.
2. Bake 15 to 18 minutes, or until golden brown, stirring once or twice during baking. Cool on tray until dry and crunchy.
3. Break into bite-sized pieces, and stir in dried fruit. Store in airtight container.
First try: Dec 2008.  Makes loose granola, good for sprinkling on thing, not for snacking by the handful.  Used whole almonds, pistachios, sunflower seeds and a few roasted peanuts.  Almonds seem too large - try slivered.  Used golden raisins, chopped apricots, and diced candied pineapple.  DH said "too nutty."
