Granola with Spelt

2 cups quick cook oats
1 cup wheat germ
1/2 cup spelt flour
1 1/2 cups dried fruit (from raisins to chopped figs)
3/4 cup chopped walnuts
3/4 cup sunflower seeds
1/8 cup flax meal
1/4 cup soy milk
2/3 cup maple syrup
1 tsp cinnamon
1. Combine the flax meal and milk in a small bowl, then set aside. Mix all the other ingredients together, then add the other mixture and stir together well. The mix will be fairly dry, but press it into an oiled 9 x 13 pan and it should hold together.  Bake at 350 degrees for 25-30 minutes, then cool, cut, and freeze the bars.

Replace sunflower seeds with pecans and add extra maple syrup for a maple-pecan confection.

Toss in a few handful of chocolate chips to get your fix for the day.

Use coconut milk in place of soy, and add shredded coconut and dried pinneapple for a tropical treat.
