I like to give myself flexibility, so I want to be able to use whatever kind of tomatoes I have on hand - whole, peeled, diced, puree, etc. My kids like smooth sauce, so I dump the can in the food processor and puree it (unless it is already puree. Then I pour out half the puree into a sauce pan (to make room in the processor). Put in all the other ingredients into the processor and whiz it around a bit. Then pour that into the pan, too. Cook it on low heat for about an hour, uncovered, stirring occasionally. It will get thick.
